Onion Soup

Onions are potent cancer fighters. Research shows that people who eat at least two onions per week have a lower cancer risk- colorectal cancer, ovarian cancer throat cancer.

Ingredients:

  • 3 large onions
  • 2 medium potatoes
  • 2 cups milk
  • 2 cups water
  • 2 tbsp butter
  • 2 tbsp finely chopped mint
  • 1/4 tsp freshly ground pepper
  • 1tbsp fried onions
  • salt to taste

Method:

  1. Minse onions
  2. Peel and cut potatoes into small pieces.
  3. Pour milk and water into a pan, add onion and potatoes and bring to gentle boil.
  4. Reduce flame and simmer till vegetables are soft.
  5. strain the clear soup, puree the solids and add to the soup.
  6. Add salt, pepper, mint, butter and fried onions.
  7. Serve with garlic toast and soup sticks.
