Onion Soup
Onions are potent cancer fighters. Research shows that people who eat at least two onions per week have a lower cancer risk- colorectal cancer, ovarian cancer throat cancer.
Ingredients:
- 3 large onions
- 2 medium potatoes
- 2 cups milk
- 2 cups water
- 2 tbsp butter
- 2 tbsp finely chopped mint
- 1/4 tsp freshly ground pepper
- 1tbsp fried onions
- salt to taste
Method:
- Minse onions
- Peel and cut potatoes into small pieces.
- Pour milk and water into a pan, add onion and potatoes and bring to gentle boil.
- Reduce flame and simmer till vegetables are soft.
- strain the clear soup, puree the solids and add to the soup.
- Add salt, pepper, mint, butter and fried onions.
- Serve with garlic toast and soup sticks.
